Executive chef Sylvain Delpique is helming this 2-day, $75 four-course holiday menu that combines familiar upscale items with some very festive twists. The evening starts with a mushroom tortellini dressed in proper stock, with takes you to either a half ostrich egg mixed with lobster and tomato or some Hudson Valley foie gras. Next up, a saffron shellfish broth that’s followed by your choice between poached black cod and venison crusted in toasted almond. The sweet finale will be a wonderful struggle between gingerbread, pear sorbet, a cheesecake lollipop tree or the “Townhouse Ule Log”—a chocolate cake with honey roasted peanuts and a goober cream to seal the sugary deal.
